Ahoy Panda,
Try this:

De-install Ship Sim Extremes with his own de-installer. When asked say yes to the option keeping your profile and saved missions.
Re-Install Ship Sim Extremes.
Do NOT apply patch 1.1 but instead of this apply patch 1.2

sh extreme can works with up to 4 monitor if man have a radeon hd 5970 cart
