I thought that we could sail in to the habour and take cars with the ferry and sail to another destination and load them of again... I hoped it would be like that

If you look in single missions there are missions with the ferry's loading
and unloading cars.

 Yes, there is indeed a single player mission with the player controlling a ferry while loading and unloading several cars.
