Ships in Ship Simulator 2006 cannot sink as sinking wasn't implemented until Ship Simulator 2008. You only get a Damage amount of money when you make collisions.

Well simulator ships but this does not mean that the ship should not sink.
This is for example if you make aircraft simulator and aircraft will not be broken.

Titanic already is in Ship Simulator 2008. And no, you can't add ships to it.
