Ok, your first question. As Eric says, the person who posted that video on how to change the wave settings has gone against the EULA, and, That means he has: 1. lost all technical Support 2. Commited an illegal action.
And as Eric says, unfortunately, other than that, there is no way to change this. However, Ship Simulator 2010 (Or, Extremes, as it is called now) will be out in the first quater of next year, and, who knows what may be there
For your second question, Unfortunately, the video you see there shows "Ship Simulator Professional" in the far, Right corner.The "Normal" Ship Simulator dosen't have a GPS, as such. Just the "Map". However, you can use dual monitors, so that you have (Like in the video) your game on one side, but, insted of the GPS as shown in the video, you'll have the normal Ship Simulator Chart - Just enlarged.
Ship Simulator Professional is, as it says on the tin, "Professional", and it designed for Nautical colleges and the likes.
