Hello and congratulations for the forum.
Sorry but I do not speak English well.

I would like to know if I can surf simulator ship all over the world.
You can plan routes free?
I can for example from France and go around the world?

Or are there only mission established?

If I understand it correctly do you mean if SSE makes use of the same kind of environment like Flight Simulator? In the sense that it's one big world with all topography modelled.

SSE features a freeroaming mode, but the environments are restricted to a certain playing field.
So in your situation, going from france and touring around the world with a long voyage is sadly not possible.
