Title: Operating System's

I am shopping for a new laptop. Could I run SS08 and the add on with Apple's  Mac OS X v10.5 Leopard?

No.

If you look at
http://www.shipsim.com/products/ship+simulator+2008.php

it shows the operating systems (Windows 2000, XP or Vista)

Yeah. I seen that but I've heard that you could run windows operating systems on an apple. I was hoping to get someone who knew if this was true or not.

The Apples can be pursuaded to rum Windows, but don't expect that to be able to run Ship Simulator or any other game.

It might, but probably wouldn't. If it did you would almost certainly have problems.
