I know she was 175 feet from the keel to the top of the (most likely third) funnel, but how tall was she with her masts?

Have you googled it?
You might find answers quicker than waiting for someone to post here.

I tried, but what I got was the heights of the masts....

Ah, I see.

I know her draft and height from water line to boat deck, but I still need one of the following to determine her height:
Height of A deck (1st class prominade)
Height from keel (or waterline) to forcastle deck (where the fore mast is)

Well... if you know the exact height from keel to funnel.. then you could just take a reliable cross section image or blueprint, and do some math... ;D
Just a thought.

AHA!
After measuring the distance on a 1:600 scale from Peter Daivies-Garner's book, it comes out to be 240 feet, 7.5 inches!

56 meters from keel to top of mast.

I was looking for US customary units....
According to Google Calculator, that's 183.727034 feet....
And that's 183 feet, 8.724408 inches....
