Have how to sink it, in any form? Downloading a mod? anythink?

If I remember correctly, the demo vessel is the Arie Visser. That isn't sinkable full stop.

The idea of a demo is to show off the capabilities of the game when sailing, not sinking. :)

Your correct, Ship Addict. And if you are looking to just sink ships in the Ship Simulator series, you've got the wrong game  :-\ try destruction simulator

The best way to sink ships in ss08 is via the mission editor. Just ramming them or driving them into icebergs is unsatisfactory.
If you want to see Latitude sink in a reasonable manner: Play > Mission “Disaster at Bergen”. You can watch her go all the way down from Arie Visser, or from aboard her.
